Umeboshi puree: to make this product, ume are passed fine after seasoning, so that they are ready for the preparation of sauces or for the addition to cereal or vegetable dishes.

Organic Umeboshi puree (Japanese salted plums). Still green harvests are put to ferment in salt in wooden barrels for a month, along with Shiso leaves that give them aroma and flavor. They are then removed from the barrels and placed to dry in the sun for a week, thus acquiring the characteristic wrinkled appearance. Put back in the barrels to season another year, they become the precious UMEBOSHI.

Japanese plums* (Prunus mume) (87%), sea salt, Shiso leaves* (Perilla frutescens).

Recommendations for use:

cooking, instead of salt, with cereals and vegetables. Or to prepare sauces. Example: mix well 1/2 teaspoon umeboshi puree, 2 teaspoons tahin (sesame cream), a little finely chopped onion. Add 1/2 cup of water and stir again. Use to season cooked vegetables, salads, etc.
