In the Marche region this crop, even at the edge of its disappearance, has never been completely abandoned, for the presence of both a gastronomic tradition and an artisan (hats and baskets intertwined with farro straw). It has been natural for us organic farmers in the region to make it, for decades, a crop of primary importance. Farro is a balanced food in every component (acids, fats, vitamins,proteins, trace elements, etc.). Rich in vitamins of groups A, B, C and E and precious mineral salts (zinc, copper, manganese, selenium, iron, etc.). It provides tasty and energetic food without weighing down the intestines but, indeed, favoring the digestive action. Widely used in diets against food intolerances.
The organic agricultural cooperative LA TERRA E IL CIELO was born in 1980 from the courageous and pioneering initiative of the founding members, in a historical period in which conventional agriculture and organic farming is a virtually unknown niche sector.
The founders want to adopt a new, more sustainable approach to cultivation, moreover in a rural region par excellence such as marche, while rediscovering a more balanced relationship with nature, the environment and, ultimately, themselves. Initially, also inspired by active movements in other European countries, the cooperative adopts biological but also biodynamic methods. It can therefore rightly be counted among the first and most lasting biological experiences on the Italian scene.
The rediscovery and relaunch of ancient varieties of cereals and legumes, selected for quality and not exclusively for quantity, has represented and represents one of the cornerstones of the cooperative's activity. Today the farro (triticum dicoccum), particularly suitable for pasting, barley world to toast, used in the past as a substitute for coffee, millet, three hard grains of ancient varieties (Senatore Cappelli, Taganrog and Etrusco), cicerchia (lathyrus sativus), considered in ancient times the legume of the poor, represent for EARTH AND SKY the true symbols of their choice of quality and sustainability. Today the range of products, with a view to cultivation and, therefore, food, as diverse as possible, has expanded and boasts a considerable choice of types of cereal paste, flours, rice, legumes, extra virgin olive oil, wines, Guatemalan Arabic coffee, barley coffee, sauces and pasta, baked goods... Productions characterized by traceability,almost completely local and regional, that very few companies in Italy can boast.
In thirty years the cooperative has developed becoming a solid Italian organic reality and without ever losing contact with the values of solidarity, equity and respect for nature, for which it was born. Today pasta and all other organic products LA TERRA E IL CIELO, obtained from raw materials grown in uncontaminated environments without the use of synthetic chemicals and with the aim of a fair remuneration of the farmers' partners, are, for quality and goodness, among the most appreciated in Italy, Europe and also in many countries of the world.
