GIROLOMONI COOPERATIVE: AT THE ORIGINS OF ORGANIC WHOLE MEAL PASTA

A piece of organic history began here, on the hill of Montebello, a few kilometers from Urbino, in the northern Marche. The fields that in summer look like immense golden expanses in winter are covered with snow, the one that according to the ancient proverbs ensures bread. Bread that was at the beginning of the adventure of the Girolomoni Cooperative – born as an Alce Nero cooperative – there was an extreme need.

It was the end of the seventies, verylittle was said about organic, there were still fifteen years to go before the first European regulations on the subject, and returning to the countryside was not at all simple. For the founder Gino Girolomoni, stubborn and determined man, fascinated by the idea of agriculture without chemistry and at the same time by the desire to remove from ruin the ancient monastery of Montebello, it was also a cultural challenge: "If our fathers have lived on these countryside for centuries, without main roads, without electricity, without telephone, without water in the house, without money, managing to marry their children and become old, we, who have all these things, possible that we are not capable of it?", wrote in 2002 in the book "Black eose cries".

Almost forty years later, many things have changed: Girolomoni disappeared in March 2012, after seeing that small cooperative that started with a production of dairy products and flours to sell in the surroundings become a reference reality for organic worldwide, especially in the whole meal pasta sector. In between, there were years of difficulty and hunger, seizures of pasta (because if complete, the authorities argued, it could not be called so), name changes due to the sale of the Alce Nero brand.

Today the cooperative, led by Girolomoni's son Giovanni, 30years old, has 33 members and 36 employees. Turnover in 2012 was 7.5 million euros, 10% more than the previous year. An example of how small producer cooperatives, usually associated with small-scale economies, can also become important economic realities. 90% of turnover comes fromexports, which reach five continents, from the United States to Japan, to New Zealand. The main product of the cooperative remains pasta: "Future investments and ideas go above all in building an increasingly important pasta supply chain from the point of view of safety, quality and environmental sustainability", explains the new president. Already today "there are a hundred farms directly involved and the wheat is still all Italian, mainly from the Marche supply chain. However, when we can we also try to promote and market products from small organic farms, and the latest product arrived is the balsamic vinegar of Modena of the Fattoria degli Orsi farm", to which are added flours, cereals, legumes, tomato purees. To the experiments to use more sustainable packaging for pasta in the future, the use of clean energy is added: "Tutta the energy used is certified by renewable energy. To date, about 20% are self-produced, but we plan to make new investments in the near future."

If international markets are fundamental to the cooperative's budget, the role it has played at local level has also been important: "The decline in the inhabitants of Isola del Piano, which is now 600, stopped when we were born. Walking for eight kilometers along the road that goes from here to Urbino, you meet 20 farms, of which 18 are organic and our partners. It is the European way of organic farming", gino Girolomoni told us, in one of his last interviews. "While in a first pioneering phase everyone was looking at us with distrust because they did not understand what we were doing up here in the hills, today we notice a certain esteem towards us and many local farmers begin to understand our potential, so much so that the last investment made is right in the storage center of 10,000 quintals of wheat in Isola del Piano for the collection of local wheat. However, we want to do something more to encourage the purchase of our pasta in the province of Pesaro-Urbino", says his son Giovanni today.

After the founder's death, in the intention also to communicate through his figure the spirit of a decades-long work, the brand changed its name: "It had already been decided together with my father. We understood that the separation from the Black Eose brand had escaped many people and that therefore a change was needed to make this step better understood. After the death of my father, we felt we wanted to dedicate not only the brand but also the name of the cooperative", says Giovanni.

An element that has always distinguished Black Eose has also been the great cultural ferment. The idea of Girolomoni, in contact with several intellectuals, from Guido Ceronetti to Carlo Bo, was that his creature also managed to represent a "homeopathiccure for the wounds of the mind" : even today meetings and conferences are organized and the Girolomoni foundation, born in 1996, in addition to promoting agriculture, he deals with the preservation and dissemination of the writings of its founder, as well as other activities such as the study of the history of the Monastery of Montebello and the hermits who lived in this place, his archaeological studies on the Sinai of the Bible, and publishes the magazine Mediterraneo Dossier.

The cultural challenge, the one that led Gino Girolomoni to return to the earth after abandoning it and cultivating it without chemistry, in times of GMOs, poorly controlled supply chains and organic scams continues: "An aphorism of my father a few years ago was that "our cooperative is ready for a new challenge: do not deprive the biological of its soul".

An organic that does not take into account issues such as renewable energy, ethical finance, fair price to producers, Italian supply chain is in some way an organic with minimum requirements. From the point of view of ideological content, of course, because otherwise the strength of our sector is that there is a regulation and control that applies to everyone in the same way and that guarantees the same standards of food safety".
