To produce this pasta is used a grain of great nutritional and historical value,grown organically. Graziella Ra® is a wheat from an archaeological excavation in Egypt brought to Italy in the late 1970s. After several traverses it was possible to multiply it and obtain the first pasta productions. It is cultivated by the members of the Girolomoni Cooperative on the hills of Montefeltro,in the province of Pesaro and Urbino.

Girolomoni pasta® produced with 100% Graziella Ra® semolla, is bronze drawn and dried at low temperatures and in a very long time (about 24 hours for long pasta and about 8 hours for short pasta) in order to maintain all the nutritional and organoleptic principles of the raw material even in the finished product.

From analyses conducted by the University of Urbino (Department of Food Biotechnology), it turns out to be a wheat particularly rich in proteins, mineral salts and selenium,a powerful antioxidant able to effectively counteract free radicals, responsible for many human pathologies.

Another important feature of this wheat is that since it has not been the subject of genetic improvement, it lends itself better than other wheats to be introduced into the diets of people suffering from eating intolerance disorders. However, this variety, like all wheats, contains gluten, so it is not suitable for feeding people suffering from celiac disease.

GYROLOMONES

In 1971 Gino Girolomoni, young mayor of the municipality of Isola del Piano (PU), began to promote initiatives aimed at enhancing and supporting the ancient peasant civilization: organic farming courses and conferences attract intellectuals, journalists and technicians from all over Italy. These first experiences are the basis of the birth, on July 13, 1977, of the Alce Nero Agricultural Cooperative, of which the brand was sold about 25 years later, becoming Montebello®. Following the death of its founder in March 2012, the Cooperative changed its name to Gino Girolomoni Cooperativa Agricola.

Girolomoni is a reality animated from the beginning by an authentic love for the land,by a deep respect for the people who live there, remaining at the forefront of the choices in favor of quality of life and theenvironment. In addition to practicing a method of agriculture that does not involve the use of synthetic chemicals, in the hill of Montebello energy is used fromrenewable sources, partly self-produced, a new biodegradable pack is being studied, sustainable behaviors are promoted within their workplaces.
