This pasta is produced using durum wheat semolo: Senatore Cappelli, cultivated, with organic method,on the Marche hills by the members of the Girolomoni Cooperative. Named so, in honor of the Senator of Abruzzo Raffaele Cappelli, promoter in the early 1900s of the agrarian reform.
Senator Cappelli is a grain with a high protein content,it is majestic and high in the fields. The remarkable height of this grain (it can reach 180 cm) has made this variety difficult to grow because it is at risk of continuous adjustment due mainly to wind and rain. In optimal soil conditions and with a mild climate trend, Senator Cappelli can achieve a yield of 18÷23 q.li production costs per hectare. The Senatore Cappelli variety, however, can be defined as an "elected variety", both because it has exceptional protein and organoleptic characteristics,and because it is the progenitor of many other varieties cultivated even today.
Girolomoni pasta®, produced with 100% semoration obtained from this wheat variety, bronzo is bronze drawn and dried at low temperatures in a very long time (about 24 hours for long pasta and about 8 hours for short pasta) in order to maintain all the nutritional and organoleptic principles of the raw material even in the finished product.
In 1971 Gino Girolomoni, young mayor of the municipality of Isola del Piano (PU), began to promote initiatives aimed at enhancing and supporting the ancient peasant civilization: organic farming courses and conferences attract intellectuals, journalists and technicians from all over Italy. These first experiences are the basis of the birth, on July 13, 1977, of the Alce Nero Agricultural Cooperative, of which the brand was sold about 25 years later, becoming Montebello®. Following the death of its founder in March 2012, the Cooperative changed its name to Gino Girolomoni Cooperativa Agricola.
