Senatore Cappelli Durum Wheat : an ancient grain rich in proteins.

This pasta is made using Senatore Cappelli durum wheat, grown, organically, by Girolomoni's partners on the Montefeltro hills. Senatore Cappelli wheat (Triticum durum) is an ancient variety of modern durum wheat. The name is in honor of Senator Raffaele Cappelli on whose lands, in the early '900, the agricultural geneticist Nazareno Strampelli effected experimental sowing, crossing different wheat varieties for genealogical selection, in order to obtain more productive grains, also resistant to diseases.

Senatore Cappelli durum wheat was for decades the most widespread cultivation in South Italy, subsequently, however, due to its low quantitative yield, this grain was in turn replaced by more productive varieties. At the beginning of the '80s, a group of researchers began to radiate it by gamma rays, causing inevitable genetic mutations, obtaining the "Croesus" variety, which even today, along with his descendants, is the most widespread grain cultivation worldwide.

Senatore Cappelli durum wheat is considered an ancient and precious variety, as it did not undergo the alterations of the modern techniques of genetic manipulation, keeping its flavor and nutritional properties unaltered. This is the reason why even experts attribute to Senator Cappelli a high tolerance and digestibility

GINO GIROLOMONI COOPERATIVE

Its story begins in 1971 with Gino Girolomoni, young mayor of the municipality of Isola del Piano, who is beginning to promote initiatives to enhance and support the ancient agricultural civilization: courses in organic farming and conferences attract intellectuals, journalists and technicians from all over Italy. These early experiences are the basis for the birth of the Agricultural Cooperative Alce Nero in 1977, which 25 years later, became Montebello®. Following the death of its founder, in March of 2012, the Cooperative changed its name to Gino Girolomoni Agricultural Cooperative.
 
Gino Girolomoni Cooperative has substantially contributed to the development of organic farming in Italy, promoting sustainability, responsible consumerism and sustainable living with great effort and commitment. 
 
The intense activities begun by Gino Girolomoni with the Cooperative has contributed to stop the escape from the countryside and push farmers to resume their activities, returning to inhabit their old houses. Since 1979, in a short time, many young people have gained access to new job opportunities, giving new life to the local economy.

Girolomoni: Beyond Organic

In what sense Girolomoni® goes "Beyond organic"? In the sense of being an enterprise animated by a genuine love for the land, a deep respect for the people who live there, staying always at the forefront in the choices favoring the quality of life and environment. In addition to the use of organic farming methods excluding completely the use of synthetic chemicals, on the Montebello hills (Italy, Marche Region) they are using energy from renewable sources and studying a new biodegradable packaging. They promote sustainable living and behavior within the workplace without failing to interact constantly with stakeholders (customers, partners, suppliers, employees, the media, local communities, etc.). Girolomoni represents, since the 70s, a strong reference point for the promotion of the local economy, in a place where the agricultural, economic and cultural activities were destined to be completely abandoned.
